  • Fresh coriander leaves for garnish

Step-by-Step Preparation:

1. Boil the Noodles:

Cook the noodles in boiling water with a pinch of salt and a few drops of oil until soft. Drain and set aside.

2. Sauté the Base:

Heat oil in a pan. Add sliced onions, green chillies, and ginger. Sauté until the onions turn translucent and aromatic.

3. Flavor It Up:

Add tamarind water, jaggery, salt, red chilli powder, and garam masala. Cook for a few minutes until the mixture thickens slightly.

4. Scramble Egg (Optional):

Push the mixture aside, crack an egg into the pan, scramble it, and mix it all together.

5. Toss Noodles:

Add the boiled noodles to the mixture and gently toss until evenly coated with spices.

6. Final Touch:

Drizzle sesame oil and add a splash of tomato ketchup or soy sauce for a balanced sweet-tangy flavor. Toss well.

7. Garnish & Serve:

Top with fresh coriander leaves and some crispy pakoda or fried chicken for the perfect street-food finish.
