Authentic Nigerian Jollof Rice Recipe: A Flavorful One-Pot Meal for Every Occasion and Celebration



Jollof rice is a beloved West African dish, particularly popular in Nigeria. It’s a vibrant, flavorful one-pot meal that’s perfect for any occasion, from everyday dinners to festive celebrations. Here’s a detailed recipe to help you create this delicious dish at home.

Ingredients:

  • 4 cups of long-grain parboiled rice
  • 1 kg chicken or beef
  • 1 liter of ground fresh tomatoes
  • 50 ml ground fresh peppers (preferably Scotch Bonnet or habanero)
  • 1 teaspoon curry powder
  • 1 teaspoon dried thyme
  • 1 teaspoon nutmeg powder
  • 2 seasoning cubes
  • 1 cup sliced onions
  • 300 ml vegetable oil
  • Salt to taste
  • 2 cloves of garlic
  • 2 fingers of ginger

Instructions:

  1. Prepare the Meat:

    • Season the chicken or beef with salt, one seasoning cube, half a teaspoon each of curry and thyme, and half a cup of sliced onions. Let it sit for a few minutes.
    • Cook the meat on medium heat for 10-15 minutes until tender. Set aside the meat and the stock.
  2. Prepare the Rice:

    • Parboil the rice by boiling 7 cups of water in a pot, adding the rice, and letting it boil for 3 minutes. Drain and rinse the rice thoroughly with clean water.
  3. Fry the Meat:

    • Deep-fry the cooked meat until golden brown and set aside.
  4. Prepare the Sauce:

    • In the same oil used for frying the meat, reduce the oil to about 250 ml. Add the remaining sliced onions and sauté for 1-2 minutes.
    • Add the ground tomatoes and fry for about 20 minutes until the oil begins to separate from the tomatoes and they turn dark.
  5. Combine Ingredients:

    • Add the meat stock to the fried tomato mixture, along with the ground ginger and garlic, remaining curry and thyme, salt to taste, and another seasoning cube. Stir well.
    • Add 4 cups of water and bring to a boil. Taste and adjust seasoning if necessary.
  6. Cook the Rice:

    • Add the parboiled rice to the pot, stir to combine, and cover. Cook on low heat for 30-45 minutes until the rice is tender and has absorbed the flavors.

Serving Suggestions:

 Serve the jollof rice hot, ga
