- 1 tbsp Ginger-Garlic Paste

- 1/2 tsp Turmeric Powder

- Salt to taste

- Curry Leaves for garnish

- Fresh Coriander Leaves for garnish

Preparation:

Step 1: 🌿Prepare the Chettinad Masala

1. Heat a tablespoon of oil in a pan. Add coriander seeds, cumin seeds, fennel seeds, black peppercorns, dry red chilies, cloves, cardamom pods, and cinnamon stick. Sauté until the spices release their aroma.

2. Add grated coconut to the pan and roast until it turns golden brown. Allow the mixture to cool down.

3. Grind the roasted spices and coconut into a fine powder using a blender. This masala is the heart of the Chettinad Chicken Curry.
