Tamil Nadu is a land rich in culture, tradition, and, most importantly, its vibrant and flavorful cuisine. Among the various delicacies that the state offers, Chettinad Chicken Curry stands out as a beloved dish, not just in Tamil Nadu but across India and beyond. This dish, known for its fiery spices and aromatic blend of ingredients, reflects the rich culinary heritage of the Chettinad region.

Ingredients:

To make this authentic Chettinad Chicken Curry, you’ll need the following ingredients:

For the Masala:

- 1 tbsp Oil

- 2 tbsp Coriander Seeds

- 1 tbsp Cumin Seeds

- 1 tbsp Fennel Seeds

- 1 tsp Black Peppercorns

- 5-6 Dry Red Chilies

- 4-5 Cloves

- 2-3 Cardamom Pods

- 1-inch Cinnamon Stick

- 1/2 cup Grated Coconut

For the Curry:

- 500g Chicken (cut into medium-sized pieces)

- 2 tbsp Oil

- 1 Bay Leaf

- 2 Onions (finely chopped)

- 2 Tomatoes (finely chopped)

- 1 tbsp Ginger-Garlic Paste

- 1/2 tsp Turmeric Powder

- Salt to taste

- Curry Leaves for garnish

- Fresh Coriander Leaves for garnish

Preparation:

Step 1: 🌿Prepare the Chettinad Masala

1. Heat a tablespoon of oil in a pan. Add coriander seeds, cumin seeds, fennel seeds, black peppercorns, dry red chilies, cloves, cardamom pods, and cinnamon stick. Sauté until the spices release their aroma.

2. Add grated coconut to the pan and roast until it turns golden brown. Allow the mixture to cool down.

3. Grind the roasted spices and coconut into a fine powder using a blender. This masala is the heart of the Chettinad Chicken Curry.

Step 2: 🍗Cook the Chicken Curry

1. In a large pan, heat oil and add bay leaf. Sauté the finely chopped onions until they turn golden brown.

2. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.

3. Add the finely chopped tomatoes and cook until they become soft and pulpy.

4. Add turmeric powder, salt, and the freshly ground Chettinad masala. Stir well and let the masala cook for a few minutes.

5. Add the chicken pieces and mix them well with the masala. Cook for 5-7 minutes until the chicken is well-coated with the spices.

6. Add water to the pan (enough to cover the chicken) and bring it to a boil. Reduce the heat, cover the pan, and let it simmer for 20-25 minutes or until the chicken is fully cooked and tender.

7. Garnish with curry leaves and fresh coriander leaves before serving.
